I revised a "Rachael Ray" recipe last night for a quick dinner.
I used:
☆1/2 small white onion diced into small pieces
☆ 3 tbsps Margarine
☆2 cups of already cooked leftover white rice
☆14oz can of quartered artichoke hearts with juices
☆a bit of parmesan cheese
☆1/2 lemon
☆1 tbsp of pine nuts
Cook onion with margarine in a medium pan for five minutes.
add in rice.... let sit for about two minutes stir a little
pour juice from artichokes in to pan and let it soak into rice for five or so minutes
add rind from lemon, juice from lemon, pine nuts, artichokes, and cheese... let cook for a couple more minutes and then remove from heat
This was excellent.
